Chopped Mozzarella, Citrus and Salmon Salad

1lb cured Salmon (lox-style)
1lb fresh mozzarella
1lb cucumbers
Juice and zest of 2 lemons
Juice and zest of 1 lime
Juice and zest of 1 orange
¼ cup olive oil
Salt
Fresh ground black pepper

Chop salmon, mozzarella and cucumbers into equal size pieces. Stir in all zest and juice. Add olive oil.

Add salt and pepper to taste. Serve on toasted baguettes.
