2014 Sparkling Rosé – Summer Pesto Chèvre
2014 Sparkling Rosé – This sparkling blend of Tempranillo, Syrah and Zinfandel presents as a beautifully balanced wine with aromas of guava and kiwi and tastes like sun-ripened strawberries.
Summer Pesto Chèvre
1 packed cup parsley leaves (stems removed)
1 packed cup basil leaves (stems removed)
zest of 1 lemon
juice of 1 lemon
1/4 c water
1/2 c grapeseed oil
Place all ingredients in food processor. Blend until a paste with no large chunks. Makes about a cup of pesto.
Mix 2 Tbs of this herb mixture into a 4 oz portion of fresh goat cheese and let set for at least 1 hour to let flavors develop.
If you have extra pesto mixture, this makes a great marinade for chicken, a great salad dressing base, or a great dipping sauce for cooked meat and veggies! Will keep in your fridge for a week.
