2008 Tempranillo—Chorizo Burgers with Fennel Green Olive Slaw

Chorizo Burgers with Fennel Green Olive Slaw

2 c sliced fennel
1 c shredded cabbage
1 c chopped green olives
¼ c mayonnaise
1 Tbs olive brine
Salt and pepper as needed

Mix everything together and season to taste. Let sit for at least an hour before serving.

½ pound ground beef
½ pound Mexican chorizo, crumbled or chopped
One small onion, diced
2 cloves garlic, chopped
Olive oil as needed
Salt and pepper as needed
Zest of one orange
4 hamburger buns

Preheat your grill. Mix everything together in a bowl, and make 4 patties. Brush both sides of each patty with oil and sprinkle with salt and pepper. Place on a hot grill and cook 4-5 minutes per side (until cooked through). When there are only a couple minutes left on the second side, place buns on the grill. Pull the buns off, place a burger on each bun, and top with some of the slaw.
