2013 Viognier – Jerk-spiced Shrimp Flatbread

2013 Viognier – Our 2013 Viognier is a rich full wine with flavors of peaches and cream, candied orange zest, and a smooth vanilla finish.

Jerk-spiced Shrimp Flatbread

1 premade pizza crust
1 Tbs oil
1/2 pound salad shrimp, precooked and not frozen
1 zucchini, thinly sliced
1/2 onion, thinly sliced
2 c cheese – mix of mozzarella and parmesan
1 c jerk seasoning (recipe follows)

Preheat your grill. Brush both sides of the pizza crust with oil.

Mix together the zucchini slices, the onion slices, the salad shrimp, and the jerk seasoning in a bowl.

When grill is hot, place one side of the crust onto the grates and let cook for 2-3 minutes.

Pull off, and flip so the grilled side is up. Pour the bowl of ingredients mixed with the jerk seasoning on top of the pizza and spread so there is even distribution. Cover with the cheese mixture.

Place back on the grill and cover. Allow to cook until the cheese is melted and the toppings are heated through.

Remove from the heat, and slice. Serve!

Jerk seasoning:
1 tablespoon allspice
1/4 teaspoon ground cinnamon
1/4 cup molasses
1 teaspoon red pepper flakes
1/4 teaspoon ground cloves
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup grapeseed oil

Mix all ingredients together in a bowl. Allow to sit for at least 30 minutes to allow flavors to come together.
